One of the most famous of ' Andalucia is the quality of its food , consists of simple dishes, mostly homemade, whose style owes much to the quality and specificity of local products, derivatives of the unique features of the area.
The wine is surely one of these unique products, and in the area of \u200b\u200bMalaga its production has the protection of a Designation of Origin, which geographically covers the territory of 66 municipalities grouped into four specific areas: Axarquía, Montes, Norte, West Coast and Serrania de Ronda, all a few kilometers away from the capital of Costa del Sol . The types are protected
: Lágrima (obtained from juice product without any process or mechanical pressure); Moscatel (sweet wine made from grapes of the same name); Pedro Ximénez (and also very sweet, with an alcohol content of around 15 °); Dulce ; Pajarete (vino liquoroso, con alto contenuto di zuccheri); Seco .
Questi vini vengono prodotti interamente con uve Moscatel e Pedro Ximenez, spesso fatte maturare più a lungo rispetto al normale o fatte seccare al sole, e sono all'origine dolci e bianchi. In base all'invecchiamento si possono ulteriormente suddividere in varie categorie: Málaga Joven e Málaga Pálido (senza invecchiamento); Málaga (dai 6 ai 24 mesi d'invecchiamento); Málaga Noble (dai 2 ai 3 anni); Málaga Añejo (dai 3 ai 5 anni); Málaga Trasajeño (More than 5 years of age).
